This means that simply seeing the word Malabar on a packet does not tell you the exact grade or size of the pepper inside.
What Is Tellicherry Black Pepper?
Tellicherry black pepper is a premium grade of black pepper associated historically with Tellicherry, now known as Thalassery, in Kerala.
In the spice trade, Tellicherry grades are associated with larger, well-developed black peppercorns. They are still the same species, Piper nigrum; the distinction is primarily a matter of commercial grading and physical characteristics.
Tellicherry is not a different species of pepper. It is a premium grading tradition built around larger, well-developed peppercorns.

What Does TGSEB Mean?
TGSEB stands for Tellicherry Garbled Special Extra Bold .
The word “Garbled” refers to pepper that has been cleaned and sorted to remove unwanted material. The grade itself is defined by physical and quality characteristics rather than simply by the name of the growing region.
Under the Indian grading specification, TGSEB pepper is retained on a sieve with holes measuring 4.75 mm in diameter. The specification also includes requirements for moisture, light berries and extraneous matter, among other quality characteristics.
One important clarification: 5.25 mm is not the definition of TGSEB. The TGSEB specification uses a 4.75 mm sieve. KERIN's selected product focuses on particularly bold peppercorns reaching approximately 5.25 mm+, which is a separate product-sizing proposition.
Why Does Peppercorn Size Matter?
Size is one of the easiest characteristics to see when comparing whole black peppercorns. Larger, well-developed peppercorns have a distinctive appearance and are widely associated with premium Tellicherry grades.
But size alone does not determine the complete quality of a pepper. Origin, maturity, drying, cleanliness, density, freshness and storage all contribute to the final aroma and flavour.
This is why premium whole pepper should be judged by more than just the number printed beside the size. A good peppercorn should be properly dried, clean, well-developed and aromatic.
Does Tellicherry Pepper Taste Different?
Many cooks value larger Tellicherry peppercorns for their pronounced aroma and fuller flavour. The experience can vary considerably, however, depending on the pepper's origin, harvest, processing, freshness and storage.
It is therefore too simplistic to say that Tellicherry pepper is simply "less spicy" than ordinary black pepper. The more meaningful difference is often the overall balance between heat, aroma and flavour complexity.
Whole pepper also has an advantage over pre-ground pepper: grinding releases aromatic volatile compounds, which is why freshly cracked pepper can provide a noticeably more fragrant experience.
Where Does Tellicherry Pepper Come From?
The name Tellicherry comes from Tellicherry, now known as Thalassery, a historic centre of Kerala's pepper trade.
Today, pepper sold under Tellicherry grades can originate from pepper-growing areas beyond the town itself. The name is therefore closely connected to the region's historic trading tradition and the premium grading of larger peppercorns.
