This is why terms such as bold, extra-bold, large-grain and jumbo are useful when describing whole peppercorns: they communicate something you can actually see and measure.
What Does 5.25mm Mean?
A peppercorn described as approximately 5.25 mm refers to its approximate diameter. It is a particularly bold size compared with many commonly available black peppercorns.
One important distinction: 5.25 mm is not the definition of TGSEB. The applicable TGSEB specification uses a 4.75 mm sieve. KERIN's 5.25 mm+ positioning describes selected extra-bold peppercorns that go beyond that minimum sieve size.
Why Does Peppercorn Size Matter?

Why Are Large Peppercorns Less Common?
A harvest naturally contains peppercorns of different sizes and levels of development. Producing a consistently bold selection therefore requires careful separation after harvesting and drying.
The larger the target size, the more selective the sorting process becomes. Smaller grains and material that do not meet the desired specification have to be separated from the final selection.
This is one reason premium large-grain pepper can command a higher price than ordinary commercial black pepper: the final product represents a more selective portion of the harvest.
