Not all black pepper is created equal. While commercial pepper is often treated as a basic commodity, premium Kerala black pepper is defined by its variety, maturity, physical characteristics and careful grading.

True black pepper comes from the mature, dried berries of Piper nigrum L., a spice cultivated in Kerala for centuries. When carefully harvested and processed, the berries develop the distinctive wrinkled appearance, pungent character and complex aroma associated with quality black pepper.

What Does TGSEB Actually Mean?

TGSEB stands for Tellicherry Garbled Special Extra Bold . It represents a premium grade of black pepper distinguished by the size, density and quality of the peppercorns.

The term “Garbled” refers to pepper that has been cleaned and sorted to remove unwanted material. The grading process also considers physical characteristics such as sieve size and bulk density.

For the relevant grade specification, pepper is retained on a sieve with holes of approximately 4.75 mm. KERIN focuses on particularly bold peppercorns, with selected grains reaching approximately 5.25 mm+.

The Chemistry of Flavor

The character of black pepper comes from a combination of naturally occurring compounds. Among them, piperine is responsible for much of the characteristic heat of black pepper, while volatile oils contribute to its distinctive aroma.

Under the relevant quality specification, Special grade pepper is associated with a minimum 4.0% piperine content on a dry basis and a minimum 2.0% volatile oil content.

These characteristics help explain why premium black pepper is valued not simply for its heat, but for the balance of heat, aroma and depth it brings to food.

The Purity Standard

Premium spice begins with careful selection. Grading and cleaning standards help ensure that the final pepper contains sound, properly dried berries with minimal unwanted material.

  • Moisture Control
    Maximum moisture level of 11.0% under the relevant specification.
  • Extraneous Matter
    Organic extraneous matter limited to 0.50%, with inorganic matter limited to 0.10%.
  • Structural Integrity
    Undeveloped pinheads and broken berries limited to 1.0%.

Why Grain Size Matters

Size is one of the first things you notice when looking at premium black pepper. Bold, well-developed peppercorns have a distinctive appearance and are prized for their fuller physical development.

But premium pepper is about more than size alone. Origin, maturity, drying, cleanliness, density, aroma and overall quality all contribute to the final experience.
